
Smoky Candied Apple
Glossy red candied apples on sticks, finished under a dome of hickory smoke for a smoky twist on the fairground classic.

Ingredients

| 1 1/2 cup | 360 ml | water |
| 2 cups | 480 ml | sugar |
| 1 cup | 240 ml | light corn syrup |
| 8 drops | red food coloring | |
| — | applewood / hickory chips |
Instructions
- Steam your apples (green or red).
- Grease a cookie sheet and insert a craft stick into each stemmed apple.
- In a pan over medium-high heat, mix the sugar, corn syrup and water. Heat until the syrup thickens or reaches 300°F (150°C). Let it cool slightly and stir in the food coloring.
- Dip the apples in the syrup and lift out, turning to coat evenly. Place on the greased cookie sheet to harden.
- Once the apples are ready, place one at a time on a plate and cover with the smoking dome. Connect the smoking gun hose and get ready to smoke.
- Load the smoking gun with hickory wood chips, connect the hose to the smoking dome, turn on the gun and ignite the chips.
- Once the dome is full of smoke, turn off the gun and let it infuse for 30 seconds — and you're ready to serve!
