Soda-Only Flatbread
A lean Christmas Eve flatbread leavened only with baking soda, no yeast.
Ingredients
| 3 cups | 720 ml | flour |
| 1 tsp | 5 ml | salt |
| 1 tsp | 5 ml | baking soda |
| 1 tbsp | 15 ml | vinegar |
| 5 tbsp | 75 ml | oil |
| 1 cup | 240 ml | lukewarm water |
Instructions
For the recipe "Lean soda flatbread for Christmas Eve", sift the flour and make a well in the center. Into the well add the soda slaked in the vinegar, the salt and the oil, and while slowly adding 1 cup of lukewarm water, knead a soft dough. Let it rest for 10 minutes. Grease a baking tray with oil and shape the flatbread by hand. Prick the entire flatbread all over with a fork so it does not crack. Brush the lean soda flatbread with oil and bake for 30-35 minutes at 180 C. If you want to add decoration on top of the flatbread, set aside a little dough before shaping it. Then decorate as you wish and according to the customs of your family, brush with oil and bake. When it comes out of the oven, sprinkle it with water and wrap it in a towel so it softens.
