
Soft and Spicy Gingerbread Cookies
Nothing says Christmas like the smell of gingerbread baking in the oven! This delicious gingerbread is guaranteed to be a winner with all of your friends and family this Christmas, or any time really!

Ingredients
| 225 g | butter, room temperature | |
| 1 cup | 240 ml | brown sugar |
| 1/2 cup | 120 ml | corn syrup (golden syrup) |
| 1 | large egg | |
| 1/2 tsp | 2.5 ml | cloves |
| 1/2 tsp | 2.5 ml | nutmeg |
| 1 tsp | 5 ml | cinnamon |
| 1 tsp | 5 ml | ginger |
| 4 cups | 960 ml | flour |
Instructions
- In a large bowl, beat the sugar and butter into a creamy mixture.
- Add the egg and corn syrup and beat again.
- Add the spices and 2 of the cups of flour and mix on low speed. Add the other 2 cups of flour and mix again until a dough forms. Shape into a ball.
- Place the dough on a lightly floured oven tray lined with baking paper. Roll out the dough to about one centimeter thick. Leave in the refrigerator for at least 20 minutes.
- After chilling, lightly flour the cookies, stamp them, cut them into cookies and move them to another tray.
- Return the tray to the refrigerator for at least 2 hours, best overnight.
- Repeat the procedure with the remaining dough (refrigerate, stamp, refrigerate).
- Bake at 160 degrees C for 9-11 minutes. Let them rest in the tray for 2 minutes and then move to a rack to cool completely.
