
Sole in Red Wine
Fillets of sole oven-baked in red wine, served with a creamy sauce and grapes. Prep 25 min, cook 35 min, total 60 min, serves 2.

Ingredients
| 2 pcs | Sole, filleted |
| 150 ml | Red wine |
| 150 ml | Cream |
| several berries | Grapes |
| 1 slice | Onion, large slice |
| 75 ml | Water |
| 1 pc | Bay leaf |
| 4 corns | Black peppercorns |
| 15 g | Butter |
| 15 g | Flour |
| — | Salt |
Instructions
- Heat the oven to 160°C. Place the sole fillets in a baking dish, pour in the wine and water. Add the black pepper, onion, bay leaf and sprinkle with salt.
- Cover with foil and bake in the preheated oven for about 10 minutes. Remove the fish from the dish and keep warm, reserving the cooking liquid.
- Melt the butter and quickly fry the flour. Add the reserved stock and stir for 2-3 minutes. Add the cream and bring the mixture back to a boil, then season with salt and black pepper.
- Add the grapes and stir. Divide the sole among plates and serve with the sauce.
