
Sour Cherry Lattice Pie
A lattice-topped pie with a sour cherry filling in a crumbly shortcrust pastry, brushed with melted butter and sprinkled with sugar. Serve with a scoop of ice cream and mint.
Ingredients
| 2 1/2 tea cups | flour (for the dough) | |
| 1 tea cup | unsalted soft butter, cubed (for the dough) | |
| 1 tsp | 5 ml | salt (for the dough) |
| 1 tsp | 5 ml | sugar (for the dough) |
| 6-8 tbsp | 90–120 ml | cold water (for the dough) |
| 3 tea cups | pitted sour cherries (for the filling) | |
| 4 tbsp | 60 ml | starch (for the filling) |
| 150 g | crystal sugar (for the filling) | |
| — | melted butter and sugar for sprinkling |
Instructions
- Put the flour, sugar and salt into a food processor. Mix. Add the cold butter and the cold water. Mix well with the dough blade. A crumbly dough forms. Take it out and knead gently by hand on a floured surface. Don't worry if it crumbles, knead patiently and it will come together.
- Wrap the dough in plastic wrap and leave to chill for 20 minutes. Take it out, place it on a floured surface and divide it into 2 parts. One is for the bottom base, the other for making the lattice. Start rolling out the dough very slowly to get a smooth dough. If it cracks, don't worry, you'll cover it with a little water. (I used 2 sheets of plastic wrap, between which I rolled it out and transferring it to the tin was very easy.)
- Place the bottom layer, cut off the excess and make the filling. Mix the sour cherries with the sugar and the starch in a bowl and stir. Pour it back in and make the lattice. (There is a link below for an easier way to make the lattice.) Fold the edges of the remaining dough and, using a little water, press the edges together well.
- Brush with melted butter on top and sprinkle with sugar. Bake at 220°C for about 20 minutes, then reduce the temperature to 180°C and bake for another 40-50 minutes, until the top becomes golden. Take out and cool. Serve with a scoop of ice cream and mint.
