
Special-Occasion Pitka
A soft, layered milk-and-honey pitka shaped from nine hand-stretched pieces, brushed with melted butter and baked in the oven.
Ingredients

| 2 sachet | Dry yeast | |
| 2 cup | 480 ml | Warm fresh milk (200 ml cup) |
| 1 cup | 240 ml | Yogurt, at room temperature |
| 2 | Eggs, at room temperature | |
| 1 tbsp | 15 ml | Salt |
| 1 tbsp | 15 ml | Honey |
| 1 cup | 240 ml | Oil |
| — | Cheese (optional) | |
| 1 pack | Butter, melted, for brushing |
Instructions
Here is the recipe: 1 kg flour and a little more for kneading. 1 baking powder 2 sachets dry yeast 2 cups warm fresh milk 1 cup yogurt at room temperature 2 eggs at room temperature 1 tbsp salt 1 tbsp honey 1 cup oil This is for the dough. You can also add cheese. The cup we measure with has a capacity of 200 ml. 1 pack of butter for brushing (melted).
Sift the flour. Add to it the dry yeast, the baking powder, the salt, the honey, the eggs, the yogurt, the oil and the warm fresh milk. Knead a medium-soft dough. It should not stick. Cover with stretch film and a thick cloth and leave to rise for about 2 hours. Then divide the dough into 9 equal pieces. Stretch each piece by hand on the counter. Brush with melted butter using a silicone brush and shape however you like. Do this with all pieces of the dough. Arrange in a large, deep tray lined with baking paper. Leave for 30 minutes to rise again. Brush with butter using a silicone brush. Bake at 180 degrees in a preheated oven until done. Brush the finished baked pitka again with butter and wrap in a thick cloth. "Let it go round the meadow," as grandma used to say.
