BackSpritz Caterpillars with Lard

Spritz Caterpillars with Lard

Soft piped cookies made with pork lard and oil, sandwiched with jam and dusted with powdered sugar.

Ingredients

4 pcseggs
1 cup (200 ml)sugar
1 cup240 mlpork lard at room temperature
0.5 cup120 mloil
1 tsp5 mlbaking soda
tip of a tspcitric acid
2vanilla
800 gflour (for a medium-soft dough)

Instructions

Beat the eggs well with the sugar, add the lard and beat to a uniform mixture, followed by the oil and the vanilla, then add the flour little by little together with the soda and the citric acid. I beat everything in a bowl and stir in the flour until it becomes a very thick mixture, which I pour onto a floured surface and knead further to the desired consistency. After that I shape the caterpillars, arrange them on a tray and bake until browned at 200 degrees. I transfer them onto a platter and sandwich them with jam. You can also roll them in ground walnuts. If they have a chance to rest, they become very soft. This batch yields quite a lot of cookies. You can also shape little roses with a piping bag and decorate with balls colored in cocoa. Dust with powdered sugar, or drizzle with a little glaze.
