Steamed Buns with 100% Rice Flour

Steamed rice-flour buns that open up like a blooming flower when done. Only slightly sweet — add more sugar if you like, or fold in sweet potato, beans or grated carrot.

Ingredients

125 gRice flour (for baking)
35 gSugar
5 gBaking powder
150 gSoy milk or water
10 gVegetable oil
10 gVinegar

Instructions

  1. Fill your steamer with water and start to heat it up (you will be steaming these on high, so be careful of the steam).
  2. Mix all the ingredients together and pour them into a muffin tray. The vinegar is to help the rice flour expand. It won't smell of vinegar at all after you've cooked your buns.
  3. Place the tray in the steamer once the water is boiling (this is the trick). Steam for 10-15 minutes over high heat. When the top of the buns opens up (like a flower blooming), it's ready.
  4. In the picture you see, I added sweet potatoes! You can add in beans or grated carrots too. This is only slightly sweet, so add more if you want.
