Steamed Lemon-Herb Fish

Ingredients

| 2 | Lemons, sliced | |
| 8 | Grouper fillets | |
| 8 | Sprigs fresh thyme | |
| 2 | White onions, sliced into thin rings | |
| 6 | Potatoes, thinly sliced | |
| 4 pinches | Salt | |
| 2 pinches | Ground black pepper | |
| 4 tsp | 20 ml | Olive oil |
Instructions
- Pour water into the inner steel pot of the pressure cooker. Place the trivet into the pot. 2. Line the bottom of the steamer basket with parchment paper. Arrange lemon slices in an even layer onto the paper. Lay fillets on the lemons; top with thyme sprigs and onion and cover with an even layer of potato slices. Sprinkle salt and black pepper over everything and coat with olive oil. 3. Lower the steamer basket onto the trivet. 4. Lock the pressure cooker lid in place and set the steam vent to Sealing. Select Pressure Cook (Manual) and cook for 10 minutes on Low Pressure. 5. Set the steam vent handle to Venting to quick-release pressure.
