Steamed Mediterranean Fish

Ingredients
| 2 pounds | 905 g | cherry tomatoes, halved |
| 2 | fresh thyme bunches | |
| 8 | cod fillets | |
| 2 teaspoons | 10 ml | olive oil |
| 2 cloves | garlic, pressed | |
| 6 pinches | salt | |
| 5 1/2 cups | 1.3 l | water |
| 4 cups | 960 ml | basmati rice |
| 2 cups | 480 ml | black olives |
| 1/4 cup | 60 ml | capers |
| 2 tablespoons | 30 ml | extra-virgin olive oil |

Instructions
- Line steamer basket of pressure cooker with a small layer of parchment paper. Arrange about half the tomatoes in a single layer on the paper. Sprinkle thyme over tomatoes, reserving a little for garnish.
- Lay cod fillets onto the tomatoes. Drizzle olive oil on top.
- Sprinkle remaining tomatoes, garlic, salt, and black pepper onto the fish.
- Stir water and rice together in the inner steel pot of pressure cooker.
- Lay pressure cooker trivet gently over the water and rice. Place steamer basket on the trivet.
- Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 7 minutes on Low Pressure.
- Set steam vent handle to Venting to quick-release pressure.
- Lift the steamer basket and trivet from the pot. Fluff rice with a fork.
- Divide fish fillets among plates; garnish with olives, capers, reserved thyme, extra-virgin olive oil, and black pepper. Serve with rice.
Mealthy Tip: Make sure to have everything ready in the steamer basket before loading the pressure cooker so the rice doesn’t absorb the liquid before the recipe gets started.
