
Strawberry Muffins
Soft muffins with cubes of fresh strawberry and a cinnamon-sugar topping.

Ingredients
| 135 g | flour | |
| 1/2 tsp | 2.5 ml | ground cinnamon |
| 2 pinches | salt | |
| 1 1/4 tsp | 6.3 ml | baking powder |
| 1/4 tsp | 1.3 ml | baking soda |
| 75 g | sugar | |
| 60 g | melted butter | |
| 125 g | yogurt 1.5% | |
| 1 | large egg | |
| 1 tsp | 5 ml | vanilla essence |
| 100 g | strawberries, cut into cubes | |
| 1 tbsp | 15 ml | sugar (for topping) |
| — | ground cinnamon (for topping), to taste |
Instructions
- Preheat the oven to 200°C.
- Grease and flour a heatproof muffin tin (6 x 80 ml).
- Wash and pat the strawberries dry. Cut into cubes.
- In a large bowl sift together the flour, salt, cinnamon and baking powder.
- Add the sugar and stir the dry mixture.
- In a separate bowl beat the egg with the yogurt using a fork.
- Add the cooled melted butter and the vanilla essence.
- Pour the dry mixture into the wet one and stir the batter.
- Tip in the strawberry cubes and gently fold everything together.
- Distribute the batter in the tin and sprinkle each muffin on top with the mixed cinnamon sugar.
- Bake the strawberry muffins 20–25 minutes.
- Cool in the tin 5–10 minutes, then remove.
