
Strudel with Mashed Potato and Tuna
A savory strudel of buttery brisée pastry filled with mashed potato, parmesan and canned tuna, rolled and baked.

Ingredients
| 200 g | flour (for the brisée pastry) |
| 100 g | butter |
| 60 g | ice-cold water |
| 4 | medium potatoes |
| 60-70 g | grated parmesan |
| 1 | egg and 1 yolk (for brushing) |
| 200 g | canned tuna |
| — | salt, black pepper |
Instructions
- From the flour, butter and water, knead an elastic dough in stages, adding a little more flour if needed. Wrap it in plastic wrap and put it in the fridge to firm up.
- Boil the potatoes and mash them. Add the egg, the parmesan, a little salt and black pepper. Mix.
- Roll out the chilled dough into a rectangular sheet. Spread the mashed potato on top and over it the crumbled tuna. Roll it up into a log, which is placed carefully (as it is soft) in a tray lined with baking paper. Press it on top with a knife without making cuts, just enough so it does not deform during baking. Brush with the loosened yolk.
- Bake in a preheated oven at 180°C for about 40–45 minutes.
