Preparation: 60 min | Cooking: 30 min | Total: 90 min | Servings: 12
Method of preparation:
Dissolve the yeast together with the sugar and one spoon of flour in 100 ml of lukewarm water and leave the mixture to bubble up.
Sift the flour, make a well in the middle and put the eggs inside, setting aside one yolk for brushing at the end.
Add the salt, the olive oil, the fresh milk, the risen yeast and the water. Begin to knead until you get a nice, soft dough. Leave the finished dough to prove for about 30 minutes.
Meanwhile, prepare the filling. Heat the oil over the fire and add the finely chopped onion and the mince beaten with a little cold water.
Sprinkle with black pepper and savory, and fry until the mince becomes small crumbs. Finally add two spoons of tomato paste, stir and remove from the heat.
Sprinkle flour on the work surface, place the risen dough and roll it out into a sheet about 1 cm thick. Cut the sheet into rectangles measuring 15 by 10 cm.
On each rectangle put 1 tbsp of the mince mixture and spread it along the length. Roll the dough into a roll, pressing the ends so the filling does not come out, and shape it like an elongated roll.
Line the bottom of a tray with baking paper and arrange the rolled baguettes on it.
Leave them for about 20 minutes to prove again, then on top of each baguette make light crosswise lines with the knife, but carefully so the filling does not come out.
Beat the yolk, adding to it 1 teaspoon of melted butter and 1 teaspoon of water. With the resulting mixture, using a brush, brush the top of each baguette, then sprinkle with sesame.
Place the tray with the baguettes in a preheated oven and bake at 180 degrees for about 25-30 minutes.
