
Sugar Smoked Pineapple
A three-ingredient smoked dessert of pineapple slices glazed with honey and brown sugar, kissed with cherry-wood smoke and dusted with cinnamon.

| 1 tbsp | 15 ml | honey |
| 1-3 tbsp | 15–45 ml | brown sugar |
| 1 tsp | 5 ml | cinnamon, for garnish |
Instructions
- Heat your smoker/grill to its high setting, around 450°F (230°C).
- While it heats, take off the top of the pineapple (reserve it for a pretty display) and cut into circles, spears or chunks, core removed. Add the pineapple to skewers or a baking sheet (skewers are optional — you can place the pieces directly onto the smoker or grill).
- Heat 1 tbsp honey in the microwave for 30–60 seconds so it spreads easily, or use your hands to coat the pineapple slices in honey. The honey helps the sugar stick as it smokes.
- Coat the slices with 1–3 tbsp brown sugar, until generously covered.
- Place the coated pineapple onto the smoker/grill and cook for 5–7 minutes on each side. (To slow-smoke instead, set the temperature to around 250°F/121°C and cook for about an hour, using cherry wood for a sweet, smoky taste.)
- Dust with cinnamon, serve hot and enjoy.
