
Sun Bread with Spinach Filling
A beautiful, elegant and unique 'Sun' bread with a filling. For the filling you can use different variants — it's important that it be colourful so it gives the bread an interesting and attractive look. Other example fillings: minced meat and onion; tomatoes, cottage cheese and onion; rice with plenty of turmeric so it turns deep yellow; grated carrots braised in butter.

Ingredients

| 350 g | spinach, cleaned (filling) | |
| 350 g | full-fat cottage cheese (filling) | |

| 100 g | yellow cheese (kashkaval) | |

| — | herbs — tarragon, lovage, parsley or others |
Instructions
- Knead a soft dough: mix the flour and salt. Make a well and pour in the warmed wine and the olive oil. Knead a dough, cover it and leave it to rest. If you don't have your own recipe or are a beginner, use a soda dough.
- Meanwhile make the filling. Blanch the spinach in boiling water, shock it in cold, squeeze it well, chop it and season with salt and black pepper. Add the cottage cheese, the grated yellow cheese and 1 egg, and stir.
- When the dough has risen the first time, knead it a few times and then divide it into 2 parts, one slightly larger than the other.
- Make a circle from the smaller part. Sprinkle one sheet with breadcrumbs. Place the filling on the dough as shown in the photo — a small amount in the middle and the rest in the form of a wreath.
- Brush the sheet with beaten egg and place the other sheet on top. Cover the whole filling with the second part of the dough rolled out with a rolling pin.
- As shown in the photo, place a glass over the filling in the middle. With a fork make pricks around the glass. Make the same pricks at the edge of the dough.
- Then, with a knife, cut the dough to form the rays of your 'Sun' bread with filling. After cutting, twist the rays so that the filling comes upward.
- Leave the finished Sun bread to rise a second time. Brush the pie with the remaining beaten egg. Bake for 35 minutes at 180 degrees.
