
Sweet Chili Soy Chicken
Chicken breasts pressure-cooked in a sweet-savory sauce of soy, honey, sweet chili, and ketchup, thickened and served over rice with sesame seeds and green onion.

Ingredients

| 2/3 cup | 160 ml | soy sauce |
| 1/2 cup | 120 ml | honey |
| 1/2 cup | 120 ml | sweet chili sauce |
| 1/2 cup | 120 ml | ketchup |
| 1 | onion, diced | |
| 2 tablespoons | 30 ml | lemon juice |
| 8 | cloves garlic, minced | |
| 1/4 cup | 60 ml | salted butter |
| 1 pinch | crushed red pepper | |
| 2 tablespoons | 30 ml | tapioca starch |
| 1/2 cup | 120 ml | water |

| — | cooked white rice (topping) |
Instructions
- Place chicken in the inner steel pot of pressure cooker. Season well with salt and black pepper.
- Combine soy sauce, honey, sweet chili sauce, ketchup, onion, lemon juice, and garlic in a small bowl; pour over chicken and then place butter on top of the chicken.
- Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 15 minutes on High Pressure.
- Set steam vent to Venting to quickly release pressure.
- Remove chicken from pot, but leave the sauce in the pot. Press Cancel.
- Select Sauté on Low.
- Stir tapioca starch and water in a small bowl until smooth; pour into the pressure cooker. Stir sauce until well combined. Cook until sauce is thickened, about 5 minutes.
- Cut chicken into ½-inch pieces; return to pot and stir with sauce.
- Sprinkle sesame seeds and green onions over chicken and serve over rice.
Mealthy Tip: Sub rice with cauliflower rice to make this a grain-free meal. Use tamari soy sauce to make it a gluten-free meal. Try this recipe using pork instead of the chicken for a different flavor.
