Sweet Chili Soy Chicken

Chicken breasts pressure-cooked in a sweet-savory sauce of soy, honey, sweet chili, and ketchup, thickened and served over rice with sesame seeds and green onion.

Ingredients

8boneless, skinless chicken breasts
to tastesalt and ground black pepper
2/3 cup160 mlsoy sauce
1/2 cup120 mlhoney
1/2 cup120 mlsweet chili sauce
1/2 cup120 mlketchup
1onion, diced
2 tablespoons30 mllemon juice
8cloves garlic, minced
1/4 cup60 mlsalted butter
1 pinchcrushed red pepper
2 tablespoons30 mltapioca starch
1/2 cup120 mlwater
sesame seeds (topping)
sliced green onion (topping)
cooked white rice (topping)

Instructions

  1. Place chicken in the inner steel pot of pressure cooker. Season well with salt and black pepper.
  2. Combine soy sauce, honey, sweet chili sauce, ketchup, onion, lemon juice, and garlic in a small bowl; pour over chicken and then place butter on top of the chicken.
  3. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 15 minutes on High Pressure.
  4. Set steam vent to Venting to quickly release pressure.
  5. Remove chicken from pot, but leave the sauce in the pot. Press Cancel.
  6. Select Sauté on Low.
  7. Stir tapioca starch and water in a small bowl until smooth; pour into the pressure cooker. Stir sauce until well combined. Cook until sauce is thickened, about 5 minutes.
  8. Cut chicken into ½-inch pieces; return to pot and stir with sauce.
  9. Sprinkle sesame seeds and green onions over chicken and serve over rice.

Mealthy Tip: Sub rice with cauliflower rice to make this a grain-free meal. Use tamari soy sauce to make it a gluten-free meal. Try this recipe using pork instead of the chicken for a different flavor.
