
Sweet Moss

Ingredients

| 30 g | glucose |
| 12 g | sugar |
| 25 g | flour |
| 5 g | baking powder |
Instructions
- With a mixer, beat the egg very well together with the glucose and sugar. You should get an airy mixture that has turned pale in colour and tripled in volume.
- Sift the flour together with the baking powder and, stirring lightly with a spatula, add it to the egg mixture. The batter needs to stay as airy as possible. And that is all — nothing different from making sponge (pandispan) batter.
- Divide the batter into 4 cups and colour them in colours of your choice. I chose a green-brown range to get as close as possible to real moss. You can make just one colour, two, three or more. It is good for the colours to be in liquid form. If yours are powder, drop a few drops of water onto it so the colour dissolves, then stir it into the batter. This way you will need shorter mixing, which will keep the batter airy. I deliberately did not mix the colours very well into the batter — I wanted to get different shades of dark and light.
- Microwave for 50-60 seconds and it is ready.
