Tamago Kake Gohan (Raw Egg over Rice)
Japan's most humble comfort food — a raw egg cracked over hot rice with soy sauce, silky and impossibly good.
Ingredients
| 1 cup (200g) | freshly cooked Japanese short-grain rice, very hot | |
| 1 | very fresh egg | |
| 1 teaspoon | 5 ml | soy sauce |
| — | optional: a drop of sesame oil, a pinch of salt, green onion slices, bonito flakes |
Instructions
- Place freshly cooked, very hot rice into a bowl.
- Crack the raw egg directly onto the rice.
- Add soy sauce and any optional toppings.
- Mix vigorously with chopsticks until the egg becomes frothy and coats every grain.
- Eat immediately while the rice is still hot enough to very lightly cook the egg. Note: Use only very fresh, high-quality eggs from a reliable source for this dish.
