Beef Roulades
Air-fryer beef schnitzels rolled around arabico rice and blanched carrot julienne, tied with twine and served with a reduced allspice beef broth sauce.

Ingredients
| 4 | beef schnitzels - 100 g each |
| 120 g | cooked arabico rice |
| 1 | onion, finely chopped |
| 1 a.f. tbsp | olive oil for the onion |
| 3/4 a.f. tbsp | olive oil for the roulades |
| 1 a.f. tbsp | finely chopped parsley |
| 1 | clove garlic, finely chopped |
| 4 | carrots cut into julienne, pre-blanched for 4 min |
| — | reduced beef broth with allspice |
| — | salt and black pepper |
Instructions
4 servings — 15 min prep, 10-12 min cooking.
- Heat the olive oil and fry the onion without letting it burn.
- Add the garlic and the parsley and stir.
- Add the cooked rice and stir. Taste and let cool.
- Season the beef fillets and place 1-2 tbsp rice in the middle.
- Lay one carrot julienne over the rice.
- Roll up the julienne like spring rolls and tie with twine.
- Cook 12 min in the remaining olive oil. Add a little broth before the dish is done.
- Before serving, cut the roulade in half and pour the sauce over it.
