
The Best Grilled Zucchini
Simple olive-oil-and-garlic zucchini grilled to tender perfection with gorgeous char marks — an easy, versatile summer side.

Ingredients
| 1 lb | 455 g | zucchini, cut into 1/2-inch pieces |
| 1 tbsp | 15 ml | olive oil, plus more for greasing |
| 1/4 tsp | 1.3 ml | garlic powder |
| 1/4 tsp | 1.3 ml | kosher salt |
| 1/4 tsp | 1.3 ml | black pepper |
| 1 tbsp | 15 ml | chopped parsley |
Instructions
- In a large bowl, toss together the sliced zucchini, olive oil, garlic powder, salt and black pepper.
- Preheat the grill or a grill pan over medium heat. Clean the grates and grease with olive oil.
- Once the grill is hot, add the zucchini and cook until grill marks form, about 4 to 5 minutes. Flip and grill until the zucchini is tender, about 3 to 4 minutes.
- Transfer the zucchini to a serving dish and garnish with chopped parsley.
Tips: For more heat, add a pinch of red pepper flakes with the black pepper. Slice the zucchini at least 1/2 inch thick so it holds its shape and doesn't fall through the grates. For char marks, place the slices at an angle on a hot, oiled grill, press lightly for direct contact and don't move them until you're ready to flip.
