Trout on a Roof Tile
Whole trout baked on a clay roof tile with tomatoes, onions, peppers and olives.

Instructions
Reconstructed classic method: 1. Soak a clean clay roof tile in water, then oil it well. Preheat the oven to 200 degrees. 2. Clean and gut the trout, rinse and pat dry, then season inside and out with salt and pepper. 3. Slice the tomatoes, onions and peppers. Arrange a bed of the vegetables on the tile, drizzle with olive oil and scatter over the olives. 4. Lay the trout on top of the vegetables, drizzle with more olive oil and season. 5. Bake for about 25-30 minutes, until the fish is cooked through and the skin is crisp and the vegetables are soft. 6. Sprinkle with chopped parsley and serve on the tile.
