Turkey Croquettes [Make w/Leftovers]
Air-fryer croquettes wrapping leftover stuffing around turkey, breaded in potato starch and panko, and served with warm gravy and cranberry sauce.

| 1 cup | 240 ml | leftover turkey breast, chopped (or make it fresh) |
| 2 cups | 480 ml | leftover easy stuffing (or make it fresh) |
| 2 | large eggs | |
| 1/2 cup | 120 ml | potato starch |
| 1 cup | 240 ml | Japanese style panko |
| 1 cup | 240 ml | warm homemade turkey gravy |
| 1/2 cup | 120 ml | leftover cranberry sauce (or make it fresh) |
Instructions
Take approximately a golf ball amount of stuffing and place 2 teaspoons of Turkey in the middle. Seal Stuffing around Turkey and roll into tight Balls. Repeat until done. Make a Breading station of Potato Starch, Eggs and Panko. Mix 1/4 teaspoon Pepper into Potato Starch. Beat Eggs until very frothy. Dredge one Turkey Croquette through the Potato Starch to completely coat. Dip Croquette into Egg and coat well. Roll Croquette through Panko. Continue until all Croquettes have been Breaded. Grease Air Fryer Basket with Coconut Oil. Spray each Croquette thoroughly with Oil Mister and place as many as can fit, leaving a little space between each Croquette, into Air Fryer Basket. Cook at 380 for 10 minutes, turning over the Croquettes after 6 minutes. Keep an eye on the Croquettes, as you may need more time. Air Fry until browned. Dip in Warm Gravy and top with Cranberry Sauce, if desired. Notes: Make as much or as little as you like. If you run out of Turkey, Stuffing Croquettes are delicious.
