Turkey Ham with Pepper
A lean, herby turkey ham flecked with colorful diced sweet pepper, pressed and cooked in the ham maker.

Ingredients
| 2 lb | 905 g | turkey meat |
| 1 tsp | 5 ml | thyme |
| 1 tsp | 5 ml | marjoram |
| 1½ tsp | 7.5 ml | salt |
| 1 tsp | 5 ml | celery salt |
| 1 tsp | 5 ml | black pepper |
| ½ tsp | 2.5 ml | sugar |
| 3 tsp | 15 ml | gelatine |
| ½ cup | 120 ml | water |
| 1 | red pepper, cut into small pieces |
Instructions
- Wash the turkey and cut it into small square pieces.
- Mix the thyme, marjoram, salt, celery salt, black pepper, sugar and gelatine into the meat, then add the diced pepper and water and mix well.
- Pack the mixture into the ham maker and close it properly.
- Refrigerate for 24-48 hours to cure.
- Stand the ham maker in a pot and pour in water so it reaches at least the same level as the meat, or higher.
- Cook for 1.5-2 hours at a water temperature of 185°F / 85°C.
- Remove the ham maker from the water, cool it in cold water and refrigerate for a few hours or overnight.
- Pour hot water over the ham-maker chamber for a few seconds to release the ham easily. Enjoy!
