
Turkey Ham with Soy Sauce
A quick homemade turkey ham marinated in soy sauce, honey and dark-fruit jam, then oven-baked and chilled for slicing.

Ingredients
| 1 lb | 455 g | turkey breast |
| 1 tbsp | 15 ml | Saskatoon berry jam (or dark-fruit jam) |
| 1 tbsp | 15 ml | soy sauce |
| 1 tbsp | 15 ml | balsamic vinegar |
| 1/8 tsp | 0.6 ml | sea salt |
| 1½ tsp | 7.5 ml | liquid honey |
| 1/8 tsp | 0.6 ml | dried garlic powder |
| 1/8 tsp | 0.6 ml | dried oregano |
| 1/8 tsp | 0.6 ml | dried basil |
| ā | butcher's string or elastic meat netting |
Instructions
- In a bowl, mix all the ingredients except the turkey to make the marinade.
- Shape the turkey breast into a log and secure it with butcher's string or netting.
- Put the turkey in a small banana-bread pan, pour the marinade over the top and roll the meat to coat.
- Cover with plastic wrap and refrigerate for 24 hours to marinate.
- The next day, preheat the oven to 360 °F (about 180 °C).
- Drain the marinade from the pan into a bowl and stir in 1½ tbsp water.
- Pour half of the marinade back over the meat and reserve the rest for basting.
- Bake for 45 minutes, or until the internal temperature reaches 160 °F (about 71 °C), basting with the reserved marinade every 10-15 minutes.
- Remove from the oven and let it cool completely.
- Once cool, refrigerate it or slice it up for individual freezing.
