Tutmanik (Layered Cheese Bread)

A Bulgarian layered cheese bread made from soft yeast dough rolled into buttered sheets, sprinkled with cheese, rolled and twisted into a pan.

Ingredients

5eggs
500 mlfresh milk
300 gcheese (to taste)
1butter
100 mloil
1yeast
1 tbsp15 mlsugar
1 tbsp15 mlsalt
1 kgflour
200 gflour (additional, to taste)

Instructions

Products: 5 eggs, 500 ml fresh milk, cheese to taste (about 300 g), 1 (block of) butter, 100 ml oil, 1 (packet of) yeast, 1 tbsp sugar, 1 tbsp salt, 1 kg flour, plus about 200 g more added additionally, but at your own discretion.

Preparation: Dissolve the yeast, the sugar and a little warm milk and wait for them to froth up. Pour the flour into a suitable bowl, make a well, add the lightly beaten eggs, the salt, the milk and the yeast. Knead a soft dough, into which we gradually add 80 g of the oil. Leave it to rise until it doubles in volume.

The finished dough is a lot for one pan. Divide it into at least 2.

From one part make this cheese tutmanik. Roll out 4 medium-sized sheets, spread with soft butter and placed one on top of another. This way it becomes layered like puff pastry. The top sheet is not spread with butter.

From the 4 sheets stuck together this way, roll out one large sheet, which you spread with butter and sprinkle generously with cheese. Roll it up into a log and cut it lengthwise into two halves. Twist them well and coil them into the pan.

Bake at 180-200 degrees in the oven until done. If you like the tutmanik, make ... tutmanik from the other part too.
