Erdinç's Tutmanik (Bulgarian Cheese Bread)
A rich Bulgarian cheese bread with cottage cheese, yellow cheese and yogurt, kneaded and baked in the bread machine (or shaped and finished in the oven).

Ingredients
| 50 g | Fresh milk |
| 50 g | Ayran (can be replaced with sparkling water or lemonade) |
| 50 g | Yogurt |
| 85 g | Oil |
| 75 g | Yellow cheese (kashkaval) |
| 150 g | White brine cheese (sirene) |
| 100 g | Egg (half a yolk with a little oil set aside for the top) |
| 5 g | Vinegar |
| 6 g | Sugar |
| 6 g | Salt |
| 550 g | White flour |
| 7 g | Dry yeast |

Ingredients needed for a 1 kg loaf, basic program:
Note: All ingredients are in grams.
Method:
- All ingredients should be at room temperature; first add the liquid ingredients, then the dry ones.
- The white cheese can be divided in two, with the second part added at the sound signal for add-ins, or before the end of kneading, so that lumps of cheese remain.
- The tutmanik can be kneaded in the bread machine and baked in the oven (60 min at 160 degrees), or baked directly in the bread machine.
