Threaded Tutmanik (Layered Cheese Bread)

A wildly popular internet-hit Bulgarian layered cheese bread, rolled into ropes the way grandmothers used to make it.

Ingredients

20 gFresh (live) yeast
1 tsp5 mlSugar
200 mlFresh milk
125 gYogurt
1 tsp5 mlSalt
100 gButter, melted
100 mlOil
Eggs (1 egg + 1 egg white)
1Egg yolk, for brushing
4 tea-cupsFlour (plus extra for kneading)
300 gWhite brine cheese

Instructions

Method of preparation:

Activate the yeast with the sugar and part of the fresh milk. After it foams up, add the remaining fresh milk, the yogurt, the egg, the egg white and 1/3 of the fat.

After everything is well mixed, add the flour little by little along with the salt until a soft, sticky dough is obtained. Leave to rise for about an hour.

Divide the dough into 4 parts. Roll out by hand into a sheet. Brush with butter and crumble cheese over it.

Roll up into a roll and place in a baking dish, twisting the sheets slightly.

Brush the tutmanik with the egg yolk. Wait for it to rise again.

Bake the tutmanik in a moderate oven at 170 degrees until golden.
