Twisted Baked Bagels

Twisted baked bagels that can be made savory (brushed with egg white, sprinkled with sesame) or sweet (with vanilla and extra sugar, brushed with sugar syrup).

Ingredients

100 mllukewarm water
200 mllukewarm milk
1 tsp5 mlsugar
7 gdry yeast or 1/2 cube fresh
1egg
1 tsp5 mlsalt
3 tbsp45 mloil
about 600 gflour
1egg white (or a whole egg) for brushing
sesame for sprinkling

Instructions

Note: Tedo and the kids prefer them without sesame.

*** If you want sweet bagels, put 1/4 coffee spoon of salt instead of 1 teaspoon, 2 vanillas and add another 70-80 g of sugar to the dough. For brushing the sweet bagels, replace the egg white with sugar syrup (1 rakia glass (of 50 ml) : 1 rakia glass of sugar, heated on the stove until a syrup is obtained).

PREPARATION:

  1. Mix the water, the milk, the yeast, 1 teaspoon of sugar and a little flour. Leave in a warm place until the mixture doubles in volume.

  2. To the active mixture add the salt (if you are making sweet bagels put only 1/4 coffee spoon of salt, 2 vanillas and add 70-80 g of sugar), the egg, the oil and flour for a soft dough. It is good to knock the dough down several times during kneading.

  3. Divide into 16 equal balls. On a work surface greased with oil make 2 balls into 2 strands, twist them as shown in the photo below and thus shape a total of 8 bagels. Arrange them apart from each other on baking paper (or a floured tray). I bake them in 2 medium-large trays, 4 in each, so they don't stick together too much.

Brush with egg white if they are savory or with sugar syrup if they are sweet. Sprinkle the bagels generously with sesame and leave in a warm place for 45 minutes.

BAKE AT 170 C for 15 min.
