
Ultimate Gourmet Grilled Cheese
A three-cheese grilled sandwich on buttery, mayo-crisped artisan bread, loaded with caramelized herb onions.

Ingredients
| 8 slices | good-quality bread, thick-cut | |
| — | mayonnaise, for spreading | |
| 12 oz | 340 g | Gruyere cheese, sliced or grated |
| 6 oz | 170 g | white cheddar cheese, sliced or grated |
| 4 slices | thin Muenster cheese | |
| 2 | yellow onions, diced | |
| 1 tsp | 5 ml | fresh thyme, minced |
| 2 tsp | 10 ml | fresh rosemary, minced, divided |
| 1 tsp | 5 ml | brown sugar |
| — | salt and pepper | |
| 3 tbsp | 45 ml | butter, divided |
| 1 tbsp | 15 ml | olive oil |
Instructions
- Add 1 1/2 tbsp of the butter and the olive oil to a skillet and heat over medium-low. Add the diced onions, salt, pepper, thyme and 1 tsp of the rosemary and sauté, stirring often, until the onions are soft and starting to brown, about 10 minutes.
- Stir the brown sugar into the onions and cook another minute, then transfer the onions to a plate.
- Spread one side of two slices of bread with a little mayonnaise.
- To the same skillet, add the remaining butter and rosemary and heat over medium heat. Swirl to coat the bottom with the melted butter.
- Add both slices of bread, mayonnaise side down, and cook until golden brown and crunchy, about 2–3 minutes.
- As soon as you add the bread, put a bit of cheese on top of each slice. Once it starts to melt a little, sprinkle a couple tablespoons of the caramelized onions over one of the slices.
- When the bread is golden brown, sandwich the two slices together and cook on low until the cheese is fully melted.
- Transfer to a plate and repeat with the remaining bread and ingredients. Slice and enjoy!
Chef tip: If your cheese won't melt smoothly, add all the cheese to a food processor and pulse until it forms a paste, then use as directed.
