Venison with Apples and Sweet Potato

Slow-cooked venison stew with sweet potato, apple and onion, finished with a spiced cinnamon-thyme sauce.

Ingredients

1 lb.455 gvenison stew meat
9 ounces255 gsweet potatoes (or 1 medium sweet potato), cut into chunks
1 cup240 mlchopped onion
1 1/4 cup300 mlchopped apple (or 1 medium apple)
1 1/2garlic cloves, minced
1/3 cup80 mlfat-free beef broth
1/2 teaspoon2.5 mlsalt
1/4 teaspoon1.3 mlblack pepper
1/4 teaspoon1.3 mlthyme
1/4 teaspoon1.3 mlblack pepper (for the sauce)
1/4 teaspoon1.3 mlthyme (for the sauce)
1/4-1/2 teaspoon1.3–2.5 mlcinnamon (for the sauce)
2-3 teaspoons10–15 mlcornstarch (more for thicker sauce)

Instructions

  1. Cut the venison, sweet potatoes, onion and apple.
  2. Place in the slow cooker with the garlic, broth, salt, pepper and thyme.
  3. Cook on low for 4 hours or until the meat is cooked.
  4. Scoop out the meat, sweet potatoes and apple, and place in a bowl; cover with foil to keep warm.
  5. Stir together the sauce ingredients (black pepper, thyme, cinnamon and cornstarch) and whisk into the remaining broth in the slow cooker. Cover and cook on high for 10-15 minutes or until it has thickened.
  6. Serve the sauce over the venison stew mixture and enjoy!
