
Venison with Apples and Sweet Potato
Slow-cooked venison stew with sweet potato, apple and onion, finished with a spiced cinnamon-thyme sauce.

Ingredients
| 1 lb. | 455 g | venison stew meat |
| 9 ounces | 255 g | sweet potatoes (or 1 medium sweet potato), cut into chunks |
| 1 cup | 240 ml | chopped onion |
| 1 1/4 cup | 300 ml | chopped apple (or 1 medium apple) |
| 1 1/2 | garlic cloves, minced | |
| 1/3 cup | 80 ml | fat-free beef broth |
| 1/2 teaspoon | 2.5 ml | salt |
| 1/4 teaspoon | 1.3 ml | black pepper |
| 1/4 teaspoon | 1.3 ml | thyme |
| 1/4 teaspoon | 1.3 ml | black pepper (for the sauce) |
| 1/4 teaspoon | 1.3 ml | thyme (for the sauce) |
| 1/4-1/2 teaspoon | 1.3–2.5 ml | cinnamon (for the sauce) |
| 2-3 teaspoons | 10–15 ml | cornstarch (more for thicker sauce) |
Instructions
- Cut the venison, sweet potatoes, onion and apple.
- Place in the slow cooker with the garlic, broth, salt, pepper and thyme.
- Cook on low for 4 hours or until the meat is cooked.
- Scoop out the meat, sweet potatoes and apple, and place in a bowl; cover with foil to keep warm.
- Stir together the sauce ingredients (black pepper, thyme, cinnamon and cornstarch) and whisk into the remaining broth in the slow cooker. Cover and cook on high for 10-15 minutes or until it has thickened.
- Serve the sauce over the venison stew mixture and enjoy!
