Waffled Falafel

Falafel batter cooked in a waffle iron for a crisp twist on the Middle Eastern classic.

Ingredients

1 canChickpeas (15 oz can)
1 tsp5 mlCoriander, ground
2 cloveGarlic
1Onion
½ cup120 mlParsley, fresh
1Egg
1 tsp5 mlLemon juice
1 tsp5 mlBaking powder
1 pinchCayenne pepper
1 dashPepper
1 tsp5 mlSalt
1 tbsp15 mlOlive oil
2 tsp10 mlCumin, ground
1 cup240 mlBread crumbs, dry

Instructions

  1. Drain and rinse the chickpeas well. Peel the garlic and roughly chop the onion.
  2. In a food processor, combine the chickpeas, onion, garlic, parsley, coriander, cumin, salt, pepper and cayenne. Pulse until finely ground but not pureed.
  3. Add the egg, lemon juice, baking powder and bread crumbs and pulse to a thick, cohesive batter. Let rest 10-15 minutes.
  4. Preheat and lightly oil the waffle iron with the olive oil.
  5. Scoop the falafel mixture onto the hot iron, close and cook until golden and crisp, about 4-6 minutes.
  6. Serve warm.
