Wasabi Peas from Scratch

Crunchy dried peas coated in a searing wasabi-flour crust — once you make these from scratch, the store-bought kind feels like a compromise.

Ingredients

1 cup (200g)dried green peas, soaked overnight and drained
1/2 cup (60g)all-purpose flour
2 tablespoons30 mlwasabi powder
1 tablespoon15 mlsugar
1 tablespoon15 mlsoy sauce
1 teaspoon5 mlsalt
2 tablespoons30 mlwater

Instructions

  1. Dry the soaked and drained peas thoroughly on a paper towel. 2. Mix flour, wasabi powder, sugar, salt, soy sauce, and water into a thick paste. 3. Toss peas in the wasabi paste until well coated. 4. Spread on a baking sheet and bake at 375°F (190°C) for 15–20 minutes until dry and crunchy. 5. Let cool completely before serving — they continue to crisp as they cool.
