Ingredients

2 cup480 mllong grain rice
1 cancrushed tomatoes
1 cup240 mlchicken broth
1/2onion, diced
2 clovegarlic, minced
1 tbsp15 mltomato paste
1 tsp5 mlsmoked paprika
1/2 tsp2.5 mlcayenne, adjust to taste
to tastesalt

Instructions

Bold, smoky, and the subject of good-natured rivalry across an entire continent about whose version is best. This is my honest home version.

  1. Add rice, crushed tomatoes, broth, onion, garlic, tomato paste, paprika, and cayenne to the pot.
  2. Select Mixed Rice and cook through.
  3. Season with salt and fluff before serving.

Chef's Tip: Jollof gets better with a slightly smoky, slightly caramelized tomato base, if your machine allows it, toast the tomato paste briefly in a hot pan before adding it to deepen that flavor further.
