| 2 cup | 480 ml | long grain rice |
| 1 can | crushed tomatoes | |
| 1 cup | 240 ml | chicken broth |
| 1/2 | onion, diced | |
| 2 clove | garlic, minced | |
| 1 tbsp | 15 ml | tomato paste |
| 1 tsp | 5 ml | smoked paprika |
| 1/2 tsp | 2.5 ml | cayenne, adjust to taste |

Instructions
Bold, smoky, and the subject of good-natured rivalry across an entire continent about whose version is best. This is my honest home version.
- Add rice, crushed tomatoes, broth, onion, garlic, tomato paste, paprika, and cayenne to the pot.
- Select Mixed Rice and cook through.
- Season with salt and fluff before serving.
Chef's Tip: Jollof gets better with a slightly smoky, slightly caramelized tomato base, if your machine allows it, toast the tomato paste briefly in a hot pan before adding it to deepen that flavor further.
