Yagodovka (Strawberry Rakia Liqueur)
A homemade Bulgarian strawberry liqueur made by steeping fresh strawberries in rakia with sugar out in the sun.
Ingredients

Instructions
- Take one of the large jars — I use 5-litre ones, but 2-litre jars also work.
- Fill with strawberries up to two fingers below the narrowing (neck) of the jar.
- Add sugar — about 300 g for a 2-litre jar and 500 g for a 5-litre jar.
- Then fill with rakia — I buy Yambol grape rakia by the litre, as it is the cheapest for me. Fill with rakia up to the narrowing of the jar.
- The sugar will start to settle down among the strawberries.
- Close the jar and leave it in the sun for 30-40 days, stirring every 3-4 days with the wooden spoon you use for jam.
- Strain through a strainer like the one for our coffee machine and store in bottles.
- Store the strawberries in ice-cream tubs and blend a few spoonfuls into creams. They are also good for eating straight.
Can be kept for up to 2 years.
