Yellow Rice (Plain)
A simple everyday yellow rice shared in a Bulgarian home-cooking chat, coloured and flavoured with turmeric and smoked paprika. Serve it plain or, for kids, stirred with a couple of spoons of canned sweet corn.

Ingredients

Instructions
This recipe comes from a Bulgarian cooking conversation. One member asked for the recipe after seeing how appetising the dish looked, and here is the reply.
- Put 1 cup of pearl (arborio-style) rice into the inner pot together with 1.5 cups of water.
- Add a good glug of olive oil (eyeballed, about 2 tablespoons), a pinch of smoked red paprika, a pinch of turmeric and salt.
- Lock the lid and cook for 6 minutes on High pressure.
- Release the steam. (The cook released it immediately when done, but recommends leaving it to sit at least a few minutes before releasing.)
- For a child's portion, stir 2 tablespoons of canned sweet corn into the rice in a bowl and serve — it disappears in no time.
