Yogurt clafoutis with strawberries and cherries

Individual yogurt clafoutis baked in ramekins with strawberries and cherries, dusted with powdered sugar and served warm.

Ingredients

3large free-range eggs
250 млfresh milk
120 гyogurt or strained yogurt
80 гlight brown sugar
100 гflour

1grated zest of 1 orange
100 гstrawberries
100 гcherries
50 гmelted and cooled butter
powdered sugar for dusting

Instructions

For more convenient serving, I baked individual clafoutis in ovenproof bowls. For this you need 10 bowls with a capacity of 80-100 ml. The clafoutis can also be baked in a 28 cm diameter pan.

Beat the eggs and sugar with a wire whisk. Add the yogurt and beat well. Alternating, add the fresh milk and the flour mixed with the salt. Finally, pour the orange zest and the melted and cooled butter into the mixture. The mixture should be as thick as pancake batter. Cover with a cloth and leave for 30 minutes at room temperature.

Heat the oven to 180°C. Spray ten ovenproof bowls with a capacity of 80-100 ml with baking spray or grease with melted butter.

Wash and stem the strawberries and cherries. Pit the cherries and cut the strawberries in half.

When the mixture has rested for half an hour, stir it again and distribute it into the bowls, filling 2/3 of their volume. Distribute the fruit over the mixture.

Bake in the preheated oven for 30-35 minutes. While baking, the mixture will puff up. After the bowls are removed from the oven, the mixture will gradually deflate. Leave to cool for 10-15 minutes and dust with powdered sugar. Serve warm or at room temperature.

With such irresistible desserts there is a great danger for a culinary blogger like me, who adores sweets and fruit, of not getting to photograph the finished dessert. Yes, the danger is great. That's why it's better to enjoy the temptation briefly, and then, recharged and in a good mood, to continue.
