
Za'atar Chicken with Lemony Rice
Middle Eastern-spiced seared chicken thighs pressure cooked over lemony white rice with red onion and garlic.

Ingredients
| 12 | boneless, skinless chicken thighs | |
| 3 tablespoons | 45 ml | za'atar seasoning |
| 1 1/2 tablespoons | 23 ml | ground sumac |
| to taste | salt and ground black pepper | |
| 3 tablespoons | 45 ml | extra-virgin olive oil |
| 1 1/2 cups | 360 ml | low-sodium chicken broth, divided |
| 1 1/2 | red onions, thinly sliced | |
| 1 1/2 teaspoons | 7.5 ml | minced garlic |
| 2 1/4 cups | 540 ml | white rice, rinsed until water runs clear |
| 1 1/2 | lemons, juiced | |
| — | chopped fresh parsley (optional) |
Instructions
- Season chicken with za'atar, sumac, salt, and black pepper.
- Heat olive oil in the inner steel pot in pressure cooker set to Saute on Normal.
- Working in batches, sear chicken in hot oil until lightly browned, about 5 minutes per batch. Transfer browned chicken to a plate with a slotted spoon.
- Pour 1/4 cup chicken stock into the pot to deglaze the pan, scraping browned bits of food off the bottom of the pan with a flat-edged wooden utensil.
- Stir onion and garlic with the stock; cook until fragrant, about 3 minutes.
- Pour remaining chicken stock into the pot; add rinsed rice and lemon juice. Spoon chicken over the rice mixture.
- Press Cancel on pressure cooker.
- Lock pressure cooker lid in place. Set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 15 minutes on High pressure.
- Allow pressure to release naturally for 5 minutes, then set steam vent to Venting to quick-release remaining pressure.
- Plate chicken pieces and rice; garnish with parsley to serve.
