
Aïoli
A Spanish garlic sauce with roasted garlic. Aïoli is a combination of all (garlic) i (and) oli (oil). Makes 1l.

Ingredients
| 10 cloves | garlic | |
| 4 | egg yolks (or 110g pasteurised egg yolk) | |
| 5 g | salt | |
| 0.5 tsp | 2.5 ml | pepper |
| 850 ml | olive oil | |
| as needed | lemon juice |
Instructions
Preparation method:
- Wrap the garlic cloves in aluminium foil and roast in an oven at 180°C for 25 minutes.
- Hang a sieve above a bowl. Press the garlic cloves through the sieve.
- Mix the garlic pulp with the egg yolk, salt, and pepper. You can do this with a whisk or a planet mixer.
- Next, add the oil in a thin stream, continuing to whisk or mix slowly. Do not beat!
- If you like, season to taste with lemon juice.
- Store at 4°C.
Serving suggestions:
- Variation tip: use mustard or vinegar for a different flavour accent.
- As a dip or sauce.
- As a base for crémeux, mousse, or crème.
- As a component in a dish with tomato, bread, onion, cod, and sweet peppers.
- As a component in a dish with poultry, eggplant, and celery.
