Spring Rolls

Crispy air-fryer spring rolls filled with sesame-garlic cabbage, carrots, and bamboo shoots. Servings: 2/4/6/8/10. Ready in 36 min.

Ingredients

2 tablespoons30 mlsesame oil
1/2 teaspoon2.5 mlminced garlic
2 cups480 mlshredded cabbage
1 cup240 mlmatchstick carrots
1/2 cup120 mlthinly sliced bamboo shoots
1 tablespoon15 mlfresh lime juice
2 teaspoons10 mlfish sauce
1 teaspoon5 mlsoy sauce
8square spring roll wrappers
water to seal wrappers
cooking spray

Instructions

Servings: 2/4/6/8/10 · Ready in: 36 min · Prep: 20 min · Cook: 16 min

  1. Preheat air fryer to 390°F (200°C).
  2. Heat sesame oil in a skillet over medium-high heat and cook garlic until fragrant, about 30 seconds.
  3. Add cabbage, carrots, and bamboo shoots to garlic and cook until slightly tender, about 5 minutes.
  4. Remove skillet from heat and stir lime juice, fish sauce, and soy sauce into vegetable mixture.
  5. Fill each spring roll wrapper with vegetable mixture, placing the filling just below the center of the wrapper. Fold the bottom point over the filling and tuck under. Fold in both sides and roll up tightly. Use water to seal the wrapper. Repeat with remaining vegetable mixture and wrappers.
  6. Spray air fryer basket with cooking spray. Place spring rolls into basket, working in batches as needed, and spray rolls with cooking spray.
  7. Cook spring rolls in air fryer for 5 minutes; turn over and cook until evenly browned, about 5 minutes more.

Mealthy Tip: Skip the fish sauce for a vegetarian version. Or cook ground pork with the garlic until browned if you want to add some protein to the spring rolls.
