0.5serrano chile, cut into thick slices

0.25 teaspoon1.3 mlground turmeric (optional)
1 teaspoon5 mlsalt
0.25 cup60 mlchopped fresh cilantro, for garnish

  1. Into the inner cooking pot of the Instant Pot, pour the water, and place a steamer basket inside. Put the cubed potatoes in the steamer basket.
  2. Lock the lid into place, select Steam, and adjust the pressure to High. Cook for 6 minutes. When the cooking is complete, quick-release the pressure.
  3. Unlock and remove the lid. Carefully remove the steamer basket and set the potatoes aside. Rinse and dry the inner liner. Place it back into the Instant Pot.
  4. Preheat the Instant Pot by selecting Sauté and adjusting to More for high heat. When the pot is hot, add the ghee and heat until it is shimmering. Add the serrano pepper and cumin seeds, and let the seeds sputter and cook for about 15 seconds.
  5. Add the turmeric (if using) and stir to mix. Add the potatoes and salt, and mix gently to coat the potatoes with the flavored ghee, taking care to not break them.
  6. Garnish with the cilantro and serve.
