Appetizing Pork Sirloin with Smoked Cheese
Serves 4. Served on a platter over mashed potatoes, decorated with carrot strips and pods of boiled green beans. It can also be garnished with boiled rice and vegetables, as well as a green salad. A suitable drink for this dish is a full-bodied red wine or quality beer.

Instructions
- Caramelize the sugar (2 tbsp) in a suitable pot on the stove.
- Add the water (4 tbsp) and a little butter and let it come to a boil.
- Cut the sirloin (800 g) into thin portions, without reaching the end with the knife. Salt them and rub them with the spices. Let them rest for half an hour.
- Then coat them first with the mustard (4 tbsp) and then with the caramel sauce. Place a piece of melted (smoked) cheese into each cut.
- Press the sirloin tightly so it gathers into one whole, wrap it in cooking foil and bake in a preheated oven for an hour and a half.
- Then remove the foil and finish baking until it gets a crispy golden crust.
