
Apple Risotto
A creamy risotto made with apple juice, white wine and diced golden apple, finished with lemon juice and optional ground walnuts, from FOOD WARS - SOMA.
Ingredients
| 1 yellow cup | Risone or Arborio rice | |
| 1 | Large shallot, finely chopped | |
| 2 | Star anise seeds | |
| 1 yellow cup | Apple juice | |
| 1 cup | 240 ml | Water with broth |
| 1/2 cup | 120 ml | White wine (Chardonnay) or brandy |
| 1 | Golden Delicious apple | |
| 1 tbsp | 15 ml | Lemon juice |
Instructions
- Saute the onion over low to medium heat until it becomes slightly yellow, then add the rice. Once it is glazed, pour in the wine.
- Once it is absorbed, pour in the apple juice and half a cup of the broth and add the anise. Add in small parts and top up as it is absorbed.
- Once it has evaporated, pour in the last of the broth.
- Once it has evaporated by half, add the diced apple and the lemon juice.
- Once the rest has evaporated it is ready to eat.
- It can be sprinkled with ground walnuts.
