
Arancini with Tomato Sauce

Ingredients
| 180 ml | water |
| 60 g | rice |
| 200 g | minced meat "Stara Planina" |
| 60 g | smoked scamorza cheese |
| — | parsley |
| 300 ml | oil |
| 50 g | flour |
| 2 | eggs |
| 50 g | breadcrumbs |
| — | salt |
| — | black pepper |
| 80 ml | olive oil (for the sauce) |
| 1 bunch | spring onion |
| 1 kg | tomato |
| 4 | garlic cloves |
| 2 | sprigs fresh basil |
Instructions
- Boil the rice in water at a ratio of 1:3.
- Then cool it and add it to the minced meat. To the mixture add finely chopped parsley and grated scamorza and season with salt and black pepper.
- Mix well and form balls about 4 cm in diameter.
- Bread the balls successively in flour, the beaten eggs and the breadcrumbs, then fry them until golden in the heated oil.
- Drain the finished arancini on kitchen paper.
- Prepare the sauce by sautéing in the heated olive oil the finely chopped spring onion, the peeled and diced tomatoes and the chopped garlic. Season with salt, black pepper and basil. Cook until the sauce thickens enough.
- Serve the arancini on a bed of the tomato sauce.
