Asian Turkey Meatballs with Asian Spiced Soy Dipping Sauce

Tender turkey meatballs pressure-cooked in a sweet-and-spicy Asian soy dipping sauce.

Ingredients

1.5 cup360 mlchicken or vegetable broth
6 tbsp90 mlsoy sauce
0.25 cup60 mlhoney
2 tbsp30 mlSriracha
2 tbsp30 mlblack beans, mashed
2 tbsp30 mlcoconut aminos
2 clovegarlic, minced
2 tsp10 mlsesame oil
2 tsp10 mlrice vinegar
0.75 tsp3.8 mlground ginger
0.5 tsp2.5 mlground fennel

0.25 cup60 mlwater
2 tsp10 mlarrowroot starch
2.5 pound1.1 kg93% lean ground turkey

Instructions

Ready in: 45 min | Prep time: 25 min | Cook time: 15 min | Servings: 4, 6, 8 or 10 (6 Quart / 8 Quart)

  1. Mix chicken broth, soy sauce, honey, 2 tablespoons Sriracha, black beans, coconut aminos, 2 cloves minced garlic, sesame oil, rice vinegar, ginger, ground fennel, cinnamon, and coriander together in a bowl until dipping sauce is smooth.
  2. Mix water and arrowroot starch together in a bowl until smooth; stir into dipping sauce until well incorporated.
  3. Pour dipping sauce into inner steel pot of pressure cooker.
  4. Mix ground turkey, onion, mushrooms, red bell pepper, cilantro, egg, 4 cloves minced garlic, 2 tablespoons Sriracha, salt, and black pepper together in a separate bowl using your hands. Roll meatballs to the size of a large egg.
  5. Place meatballs into the pressure cooker with the sauce, until bottom is filled. Layer the remaining meatballs on top of the first layer.
  6. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 10 minutes on High Pressure.
  7. Allow to sit for 5 minutes before releasing the pressure.
  8. Carefully remove the meatballs and place into a bowl or on a plate.
  9. Press Cancel on the pressure cooker.
  10. Select Sauté mode on Low, and cook sauce, whisking every couple minutes, until thickened, 6 to 10 minutes.
  11. Pour sauce into another bowl and serve alongside meatballs.

Mealthy Tip: Serve with soba or rice noodles mixed with sesame oil, Sriracha, and soy sauce. Add some veggies and avocado. They can also be served as an appetizer with toothpicks. Replace turkey with beef or chicken. Replace soy sauce with tamari soy sauce or liquid aminos to make gluten-free.
