| 1 cup | 240 ml | vine-ripened tomatoes, pureed |
| 1 tablespoon | 15 ml | Italian seasoning mix |

- Press the "Saute" button and heat the olive oil until sizzling. Now, saute the onion until tender and translucent.
- Stir in the garlic and continue to saute an additional 30 seconds, stirring frequently.
- Stir in the salt, black pepper, butternut squash, peppers, tomatoes, and Italian seasoning mix.
- Secure the lid. Choose the "Manual" mode and cook for 4 minutes at High pressure. Once cooking is complete, use a quick pressure release; carefully remove the lid.
- Afterwards, scatter the grated cheese over the caponata and serve warm. Bon appetit!
