Bacon & Cheddar Pretzel Bites

Ingredients

to tastepretzel salt
1/4 cup60 mlbaking soda
2 quart1.9 lwater
1 cup240 mlbacon pieces
1 packagepremade pizza dough
1/2 cup120 mlcheddar cheese
3 cup720 mlsharp cheddar cheese (for the beer cheese dip)
1/2 cup120 mlbeer (for the beer cheese dip)
1 cup240 mlwhole milk (for the beer cheese dip)
3 tbsp45 mlunsalted butter (for the beer cheese dip)
3 tbsp45 mlDerek Wolf Honey Mustard IPA Rub (for the beer cheese dip)
3 tbsp45 mlall-purpose flour (for the beer cheese dip)

Prep Time: 10 Minutes | Cook Time: 20 Minutes | Total Time: 30 Minutes | Serving: 4

For the Pretzel Bites:

  1. Warm the oven up to 425º F.
  2. Cut the pizza or pretzel dough into 16 equal pieces. Spread out one piece until it's about a 3 ½-inch square. Then, add some bacon and ⅓ tsp of Cheddar cheese. Fold up and pinch the sides together. Roll the ball in your hands and place it on a baking sheet lined with parchment paper. Do it again with the rest of the dough. Place a cast iron skillet aside and grease it with cooking spray or bacon grease you have left over.
  3. Put the water in a large pot and heat it over medium-low. Put the baking soda slowly; it will bubble up and then go down. Slowly flip the balls in the water for 45 to 60 seconds after adding 5 to 6. Take out and put in the skillet that has been prepared. Add any salt you like, then cut an X on each one.
  4. Put it in the oven for 20 to 25 minutes or until the top and bottom are browned. Take it off and keep it warm.

For the Beer Cheese Dip:

  1. Put 3 tbsp of butter in a small saucepan and set it over medium-low heat. Add the flour and mix it in with a whisk for about 30 seconds. Slowly add the beer while whisking all the time. Gently pour in the milk and mix it in with a whisk. Put Add cheddar cheese and spice mix. Whisk on low until the cheese melts. Keep warm.
  2. Enjoy the beer cheese dip with the warm pretzel bites.
