Bacon & Cheddar Pretzel Bites

Ingredients

| 1/4 cup | 60 ml | baking soda |
| 2 quart | 1.9 l | water |
| 1 cup | 240 ml | bacon pieces |
| 1 package | premade pizza dough | |
| 1/2 cup | 120 ml | cheddar cheese |
| 3 cup | 720 ml | sharp cheddar cheese (for the beer cheese dip) |
| 1/2 cup | 120 ml | beer (for the beer cheese dip) |
| 1 cup | 240 ml | whole milk (for the beer cheese dip) |
| 3 tbsp | 45 ml | unsalted butter (for the beer cheese dip) |
| 3 tbsp | 45 ml | Derek Wolf Honey Mustard IPA Rub (for the beer cheese dip) |
| 3 tbsp | 45 ml | all-purpose flour (for the beer cheese dip) |

For the Pretzel Bites:
- Warm the oven up to 425º F.
- Cut the pizza or pretzel dough into 16 equal pieces. Spread out one piece until it's about a 3 ½-inch square. Then, add some bacon and ⅓ tsp of Cheddar cheese. Fold up and pinch the sides together. Roll the ball in your hands and place it on a baking sheet lined with parchment paper. Do it again with the rest of the dough. Place a cast iron skillet aside and grease it with cooking spray or bacon grease you have left over.
- Put the water in a large pot and heat it over medium-low. Put the baking soda slowly; it will bubble up and then go down. Slowly flip the balls in the water for 45 to 60 seconds after adding 5 to 6. Take out and put in the skillet that has been prepared. Add any salt you like, then cut an X on each one.
- Put it in the oven for 20 to 25 minutes or until the top and bottom are browned. Take it off and keep it warm.
For the Beer Cheese Dip:
- Put 3 tbsp of butter in a small saucepan and set it over medium-low heat. Add the flour and mix it in with a whisk for about 30 seconds. Slowly add the beer while whisking all the time. Gently pour in the milk and mix it in with a whisk. Put Add cheddar cheese and spice mix. Whisk on low until the cheese melts. Keep warm.
