Ingredients

500 g (2 packs)spaghetti
5garlic cloves, chopped
1large white onion, chopped
4 tbspsoy sauce
2 tbspfaja lobi sauce (spicy)
2 tbspkaempferia galanga powder (kendjoer poeder)
galangal powder (laos poeder)
allspice grains (piment korrels, lontai)
a handfulfresh celery leaves, chopped
3bay leaves (salam leaves)
3 kiloschicken thighs
2 tbspfaja lobi sauce (for chicken)
2 tbspgalangal powder (for chicken)
2 tbspkaempferia galanga powder (for chicken)
1 tbspallspice (for chicken)
3 tbspsoy sauce with pepper (optional, for chicken)
2bay leaves (salam leaves, for chicken)
1white onion, chopped (for chicken)

2 cupswater (sour/sweet cucumber)
1 cupvinegar (sour/sweet cucumber)
1 tbspsalt (sour/sweet cucumber)

Instructions

Chicken:

  1. Season the chicken thighs with faja lobi sauce, galangal powder, kaempferia galanga powder, allspice, soy sauce (with pepper if using), bay leaves, chopped onion and garlic. Let marinate.
  2. Fry or roast the marinated chicken thighs until browned and cooked through.

Bami: 3. Boil the spaghetti until just done, drain and rinse with cold water so the strands don't stick. 4. Heat oil in a large wok or pan and sauté the chopped onion and garlic until fragrant, adding the bay leaves and allspice grains. 5. Stir in the soy sauce, faja lobi sauce, kaempferia galanga powder and galangal powder. 6. Add the drained spaghetti and toss well to coat evenly; stir-fry until heated through. 7. Stir the chopped fresh celery leaves through the noodles at the end.

Sour/sweet cucumber: 8. Combine water, vinegar, salt, sugar and allspice. Slice the cucumber and let it steep in the mixture. 9. Serve the bami with the chicken and the sour/sweet cucumber on the side.
