
Bean Stew with Plums
A Bulgarian lenten bean stew simmered with sweet plums, herbs and a touch of apple cider vinegar.

Ingredients
| 2 tea cups | red beans | |
| 1 head | red onion | |
| 1 tsp | 5 ml | red pepper (paprika) |
| — | salt, black pepper | |
| — | fresh spearmint leaves | |
| 10 | pitted plums | |
| — | oil for frying | |
| a few sprigs | fresh parsley | |
| 500 ml | vegetable broth | |
| 1 tsp | 5 ml | apple cider vinegar |
Instructions
Soak the beans overnight, then the next day rinse and boil them. Heat oil in a pot, saute the finely chopped red onion and add the beans. Season with salt, black pepper and red pepper (paprika) to taste. Stir and add the finely chopped parsley and spearmint. Add the plums, the vinegar and the broth. Reduce the heat and simmer over low heat for 30-40 minutes. Let cool, spoon the dish into bowls and serve.
