Beef and Apricot Tagine

A fragrant Moroccan-style beef tagine spiced with cinnamon, turmeric and star anise, finished with honey, dried apricots and toasted almonds.

Ingredients

0.25 cup60 mlolive oil
2 wholeonions, minced
4 pounds1.8 kgbeef stew meat, patted dry
2 teaspoons10 mlground cinnamon
1 teaspoon5 mlpaprika
1 teaspoon5 mlturmeric
1 teaspoon5 mlsalt
0.5 teaspoon2.5 mlground ginger
0.5 teaspoon2.5 mlground allspice
2 wholestar anise
2 cups480 mlwater
2 tablespoons30 mlhoney
2 cups480 mldried apricots, halved
0.5 cup120 mlalmond slivers

Instructions

  1. Heat olive oil in inner steel pot of pressure cooker set to Sauté on Normal. Cook and stir onion in hot oil until softened, about 3 minutes.
  2. Stir beef into onion; cook until browned, about 2 minutes per side.
  3. Stir cinnamon, paprika, turmeric, salt, ginger, allspice, and anise with beef and onion; cook and stir until aromatic, about 2 minutes.
  4. Pour water and honey over beef and onion mixture.
  5. Lock pressure cooker lid in place and set steam vent to Sealing. Select Meat/Stew and cook for 50 minutes on High pressure.
  6. Soak dried apricots in hot water in a bowl until softened.
  7. Heat a skillet over medium heat. Toast almonds in hot skillet until just lightly browned, about 3 minutes.
  8. Allow pressure in pressure cooker to release naturally for 15 minutes, then set steam vent to Venting to quick-release remaining pressure.
  9. Drain apricots and stir into beef tagine. Sprinkle toasted almonds over the tagine to serve.

Mealthy Tip: Star anise has a powerful and liquorice-like flavor that ensures an authentic touch in the preparation of certain dishes. The whole stars can be added directly to the MultiPot Pressure Cooker. Just be sure to find the whole star and remove before serving.
