Beef and Rice Bowl - Gyudon

Gyudon is Japan's go-to lunch. It's tasty, easy and filling. It's important to slice your beef and onions as thin as you can. If you have left-over pork, you can use that, as well.

Ingredients

4 tbsp60 mlvegetable oil
1sliced onion
1/2 lb225 gsliced beef (beef with a bit of fat is best)
1 tbsp15 mlsugar
1 tbsp15 mldry sherry
1 tbsp15 mlsoy sauce
1/2 tbsp7.5 mlsake
1/2 cup120 mlbeef broth or homemade dashi
2eggs
2 cups480 mlcooked rice
1/4 cup60 mldiced scallion

Instructions

  1. Heat 2 tbsp. oil in a skillet and fry the onions for 10 minutes. Stir frequently.
  2. Stir in the beef slices and sugar and cook for 5 minutes.
  3. Add the dry sherry, soy sauce, sake and broth and stir.
  4. Simmer the broth for 15 minutes.
  5. Adjust the seasoning, if necessary.
  6. In a second skillet, heat the remaining vegetable oil.
  7. Crack the eggs and fry them sunny-side up.
  8. Fill 2 bowls with the cooked rice and add the beef mixture and chopped scallions.
  9. Top each bowl with a fried egg.
